When the colors start changing on the trees people think about cooking with apples or pumpkin. Garden Gate Get-A-Way Bed & Breakfast near Berlin, Ohio, has some recipes that you are sure to enjoy. FRESH APPLE COFFEECAKE: Preheat oven to 375. 1 c. sugar, 3 eggs, 2 c.flour, 1 1/2 t. baking powder, 3/4 c. melted butter, 1/2 c. milk, 2 t. Vanilla, 2 apples. Topping: 1/3 c. sugar + 1 1/2 t. cinnamon. Beat sugar & eggs in a mixing bowl. In a separate bowl, toss flour & baking powder. To sugar & egg mixture, add: 1/3 flour mixture and melted butter, mix; Add another 1/3 flour, mix; Add milk, vanilla, & remaining flour. Mix until batter is smooth. Peel and chop 1 apple and fold in to batter. Pour into a greased baking dish (11 x 7). Cut the remaining apple in chunks and place on top of the batter (with peels on). Pour topping over the top and bake for 35 minutes or until a knife inserted comes out clean. PUMPKIN MUFFINS: Preheat oven to 375. 1/2 c. butter, melted, 1 c. sugar, 1-15 oz. can pumpkin, 2 eggs, 2 c. flour, 2 t. baking powder, 1 1/2 t. cinnamon, 1/4 t. nutmeg, 1/4 salt, 1 c. milk, 1/2 c. golden raisins. Topping: mix 1/4 c. sugar with 1/2 t. cinnamon. Cream butter, sugar & pumpkin until smooth. Add eggs and blend well. Combine dry ingredients then add to egg mixtures along with the milk. Fold in raisins and fill greased muffin tins 3/4 full. Sprinkle wiht topping. Bake 20-25 minutes or until a toothpick inserted comes out clean.
