Candy Cane Icebox Cookies are a hit a Bed and Breakfast Inn of Ohio

A bed and breakfast inn of Ohio participated in a Christmas Cookie Tour of Inns last month in Holmes County Amish Country.  Each inn baked a different cookie and gave one to the 1200 people that bought tickets for the tour.  They also decorated their inns for Christmas to make the occasion more festive.   Proceeds went to Hospice of Holmes County and Love Center Food Pantry.  Garden Gate Get-A-Way Bed & Breakfast, in Millersburg, baked a Candy Cane Icebox Cookie. The recipe is:
1 c. unsalted butter, softened
1 c. white sugar
1 Egg
1 1/2 t. vanilla
2 2/3 c. flour
1/2 t. baking powder
1/4 t. salt
3/4 c. crushed candy canes
Cream butter and sugar.  Add egg and vanilla.
Combine flour, baking powder and salt in a separate bowl.
Combine the 2 mixtures until just moistened.
Divide the dough in thirds, shape dough to a 7" rectangle,  and wrap tightly with wax paper.
Refrigerate 3-24 hours.
Preheat oven to 375 degrees.  Slice dough 1/4" thick and place on parchment paper on a baking sheet.
Bake 10 minutes.   Makes 6 dozen.
This recipe is simple and tasty enough that you could change the candy to pastel hard candy at Easter, or orange hard candies at Halloween.
