recipes for our bed and breakfast in Ohio I love to find those that are tasty, perhaps gourmet, and yet easy to make. These lemon flavored muffins will remind you of pound cake.
1/2 c. butter, softened
1 c. sugar
1 t. vanilla extract
1/2 t. lemon extract
1 3/4 c. sifted flour
1/2 t. salt
1/4 t. baking soda
1/2 c. sour cream
2 c. powdered sugar
3 T. lemon juice
Preheat oven to 400 degrees and grease some mini-muffin pans.
Cream the butter and sugar in a large bowl. Add eggs and extracts; beat well. In a smaller bowl combine flour, salt, and baking soda; add to creamed mixture alternately with sour cream. Do not over mix.
Fill greased muffin cups 3/4 full. Bake at 400 for 10 minutes or until a toothpick inserted in the center comes out clean. (Note: Do not cook until brown or they will be tough)
Cool for 5 minutes, remove from pan to a cooling rack, combine glaze ingredients, and drizzle the glaze over the top. Yield about 2 dozen.
