Bed & Breakfast Inn of Ohio Recipe for Easy Strawberry Streusel Muffins

June is a month when strawberries ripen on the vine in the Midwest and one bed and breakfast Inn has a delicious muffin recipe to check out.

Strawberry Streusel Muffins:

Cream together:
1 stick of butter, softened
2/3 cup sugar
Add 2 eggs (1 at a time)
Add 1 t. Vanilla
3/4 c. milk

In another bowl mix:
1 3/4 cups flour
2.5 t. baking powder
1/4 t. salt

Combine the wet and dry mixtures until just moistened.  Gently fold in 1.5 cups chopped fresh strawberries.  Fill greased muffin tins 3/4 full and add Streusel Topping.

Streusel Topping:
1/2 stick butter
1/2 cup brown sugar
1/2 t. cinnamon
2/3 cup flour

Mix streusel topping ingredients with a pastry blender until crumbly and spoon on top of muffins before baking.

Bake 25 minutes at 350 degrees.  Yields 1 dozen muffins.
