Summer seems to be the time of year when you find more zucchini in the garden than you know what to do with it. This simple muffin recipe is delicious and they disappear quickly. Visit our bed and breakfast inn of Ohio and you may find them on the menu:
2 c. flour
1 c. sugar
1 t. baking soda
1/2 t. baking powder
2 t. ground cinnamon
1 c. golden raisins
1/2 t. salt
2 large eggs, beaten
1/2 c. vegetable oil
1 T. vanilla extract
2 c. shredded zucchini
Preheat oven to 375. Line 24 muffin tins with baking cups.
In one bowl blend the flour, sugar, baking soda, baking powder, cinnamon, raisins, and salt.
In another bowl combine the eggs, oil, vanilla.
Combine the 2 mixtures until moistened and gently fold in the zucchini.
Fill muffin cups 3/4 full and bake for 15-20 minutes until a toothpick inserted in the center comes out clean. Cool for 5 minutes before serving.
