Fall Apple Cinnamon Muffins among Bed and Breakfast Recipes

Autumn is apple season and if you look for bed and breakfast recipes you might want to try Apple Cinnamon Muffins.  These muffins are simple and a big hit with guests at Garden Gate Get-A-Way Bed & Breakfast in Millersburg, Ohio.

Apple Cinnamon Muffins
2 1/4 c. flour
1/2 c. sugar
1 T. Baking Powder
1/2 t. cinnamon
1/2 t. salt
2 eggs
1/3 c. melted butter
3/4 c. milk
1 1/2 c. chopped apples (peeled)

1/3 chopped pecans or walnuts
1/4 c. packed brown sugar
1/2 t. cinnamon

In one bowl combine the 1st 4 ingredients.  In another bowl beat eggs, butter, and milk.  Add flour mixture to liquid and stir until just moistened. Fold in chopped apples.
Spray mini-muffin tins with Pam and fill 3/4 full with batter.  Sprinkle with topping.
Bake 10-12 minutes at 375 degrees.  Yields 48 mini muffins.
