Lemon Drop Cookies among Bed and Breakfast Recipes

If you're wanting to make a cookie that reminds you of summer without a lot of heavy ingredients then be sure to try these Lemon Drop Cookies that are among our Ohio Bed and Breakfast recipes
1 c. Crisco Butter Sticks
3/4 c. White Sugar
3/4 c. Light Brown Sugar (packed)
1 t. Vanilla Extract
2 eggs
2 1/4 c. flour
1 t. salt
1 t. baking soda
2 c. lemon chips

Beat the first 5 ingredients in one bowl.  In a separate bowl combine the flour, salt and baking soda.  Stir the two mixtures until just moistened.  Fold in the lemon chips (available at bulk food stores).  Place batter by the heaping teaspoon on a non-greased baking sheet.  Bake in at 375 degrees in a preheated oven for 9 minutes until edges are slightly browned.  Cool for a few minutes before moving to a wire racks.  Yields about 3 dozen large cookies.
