Ohio Bed and Breakfast Shares Cinnamon Streusel Muffin Recipe

Every morning our Ohio bed and breakfast includes muffins on our breakfast buffet.  One very popular muffin is our Cinnamon Streusel Muffin recipe.

Cinnamon Streusel Muffins

Muffin Batter:
1/2 c. melted butter
1/2 c. sugar
2 eggs
1 c. sour cream
1 t. vanilla
2 c. flour
1 t. baking powder
1 t. baking soda
1/2 t. salt

1/2 c. brown sugar
1/2 c. finely chopped pecans
1 t. ground cinnamon

Preheat oven to 375 degrees.
Beat butter, sugar and eggs.  Add sour cream and vanilla.  Combine the dry ingredients in a small bowl and then add them to the wet mixture.  Stir until just moistened.  Sprinkle all but 1/4 c. of the filling mixture on top of the batter.  Take a spatula and cut through to marble the batter with the filling - don't over mix.
Spoon the batter into greased muffin cups.  Sprinkle the tops with remaining filling.
Bake 20-25 minutes until a toothpick inserted in the center comes out clean.
Yields 1 dozen regular muffins or 2 dozen mini-muffins.
