Troyer's Genuine Trail Bologna Celebrates 100 Years Says Ohio Bed and Breakfast

There are many tourist attractions near our Ohio bed and breakfast but one of them just turned 100 years old.  That business would be Troyer's Genuine Trail Bologna.  The actual inventer of this famous bologna was actually someone named Absolom Weiss.  He sold his meat market and bologna business to Michael Troyer in 1912 and it has been in the Troyer family since.  Before the modern conveniences we live with today, this ring bologna was processed by hand vs. machine and blocks of ice kept the refrigeration in the factory/store, not a refrigerator.  Meats were manually smoked and packaging was processed by hand as recently as 5 years ago.    Every week this company produces 25,000 pounds of Troyer's Genuine Trail Bologna and as much as 50,000 pounds per week over the holiday season.  Today it is still smoked over hickory wood much the way it was years ago.  Many people think that the name came from the town of Trail where the factory is located.  It was actually called Trail Bologna because it was portable meat that didn't require refrigeration for quite some time.   Many of the restaurants in Holmes County, Ohio serve Trail Bologna & Swiss sandwiches using this popular product.  The bulk food stores and meat markets in the area sell this Trail Bologna but you can still purchase it in Trail next to the factory at a General Store.  The next time you visit Amish Country you will have to try some for yourself.
