Bed and Breakfast Inn of Ohio Suggests Valentines with a Kiss

When I was a little girl going to Grandma's house was an exciting thing to do.  One fond memory was Grandma's cookie jar.  One of my favorite cookies were her Peanut Butter Cookies Sealed with a Kiss.  Today I make these cookies at our bed and breakfast Inn of Ohio for our guests.  I thought that Valentines Day would be a perfect time to share a bed and breakfast recipe with "a kiss".

Peanut Butter Kiss Cookies

Peanut Butter Cookies Sealed with a Kiss
 2/3 c. smooth peanut butter
1/4 c. Crisco butter stick
1 c. packed brown sugar
2 large eggs
2 t. vanilla
1.5 c. flour
1/4 t. salt
Sugar for coating
Hershey chocolate kiss candies

Preheat oven to 350 degrees.
In one bowl beat peanut butter, Crisco, and brown sugar until combined.  Add the eggs one at a time, followed by the Vanilla.
Blend the flour and salt in another bowl and then add to the peanut butter mixture.
Shape the dough in 1" balls and roll in sugar to coat lightly.  Place on ungreased cookie sheets about 2" apart.  Bake for 8 minutes and then lightly press and unwrapped kiss into each cookie and bake another 4 minutes until lightly browned.
Yields about 40 small cookies or 30 larger ones.
