Looking for a great Easter brunch recipe? Try this easy Danish which is among the bed and breakfast recipes at Garden Gate Get-A-Way Bed & Breakfast. It does take a little time because of letting the dough rise but the process is simple.
Danish
2 packets of Active Dry Yeast
1.5 cups warm milk
4 c. pastry flour
1/2 c. sugar
2 t. salt
1 c. cold butter
4 egg yolks
2 egg whites, beaten
Pie filling
Topping
1.5 cups powdered sugar
1 t. vanilla
2-3 T. milk
In a bowl, dissolve yeast in warm milk.
In another bowl combine flour, sugar & salt. Cut in butter with a pastry blender until mixture is crumbly. Stir in yeast mix and egg yolks. Cover and refrigerate for several hours.
Punch the dough down and turn on to a lightly floured surface. Divide the dough in 3 sections. Roll each section out into a 9"x7" rectangle. Cut into 7 one inch strips. Form a circle with the dough and place circles 2" apart on a greased cookie sheet. Cover and let rise in a warm place for 30 minutes.
Brush each circle with egg whites. Make an indentation in the center with a teaspoon and fill with indentation with pie filling.
Bake at 350 degrees for 14-17 minutes until slightly browned. Cool on wire racks. Once cooled combine the topping ingredients and drizzle over the danish.
Yields about 21-24
