Apple-Cheddar Egg Bake Among Bed and Breakfast Recipes

Our bed and breakfast recipes include several egg casseroles and this particular one with apples is meat-free for our vegetarian guests.
Apple Cheddar Egg Bake
4 eggs, beaten
1 c. milk
1/4 c. Jiffy Baking Mix
1/4 t. salt
1 c. cubed, peeled, apples
1/4 c. chopped onion
2 T. butter
1 c. shredded, Smoked Cheddar Cheese;
plus a little extra for topping
Saute apples and onion in butter; set aside.  Combine eggs, milk, Jiffy Mix, and salt.  Add cheddar, apples and onion; stir.
Pour in a greased 9" x 9" baking dish.
Bake at 350 degrees for 45 minutes.
(Around the 40 minute mark sprinkle more shredded cheese on top for the last 5 minutes of baking)
Let sit 5 minutes before slicing and serving.
