Bed and Breakfast Inn of Ohio Shares Blackberry Muffin Recipe

Each morning at our bed and breakfast inn of Ohio our breakfast includes homemade muffins made from scratch in our kitchen.  One tasty muffin recipe is our blackberry muffins.
2.5 cups sifted flour
1 T. baking powder
1/2 t. salt
3 eggs, separated
1/2 cup sugar
1/4 cup vegetable oil
2/3 cup milk
1 cup blackberries

Baking Instructions:
Preheat oven to 400 degrees.
Line cupcake pan with paper baking cups.
In a large bowl blend flour, baking powder, and salt.
In a medium bowl, beat egg yolks, sugar, oil, and milk.
In a small bowl beat the egg whites until stiff then add blackberries.
Combine the large and medium bowl ingredients.  Gently fold in the egg whites with berries.
Spoon batter in to muffin cups, filling 3/4 full.
Bake for 20-25 minutes at 400 degrees, or until a cake tester inserted in the center comes out clean.
Cool 5-8 minutes before serving.
