Bed and Breakfast Inn of Ohio Shares Easy Peach Muffin Recipe

No one wants to spend hours in the kitchen to make something tasty.  At our bed and breakfast inn of Ohio we think we found a great Peach Muffin recipe that is easy to prepare and tastes delicious.
Fresh Peach Muffin Recipe
Preheat oven to 400 degrees, and line muffin pan with paper liners.

1 c fresh, chopped peaches
1 t lemon juice
2/3 c sugar
2 c flour
3 t baking powder
1 t cinnamon
1 egg
1 c milk
1/4 c melted butter

Put peaches in a small bowl and drizzle with 1 T sugar and the lemon juice; set aside.  In another bowl blend flour, rest of sugar, baking powder, and cinnamon.  In another bowl beat egg, milk and margarine.  Combine dry ingredients with wet ingredients until just moistened then gently fold in the peaches.   Spoon batter in to baking cups and fill about 3/4 full.  Bake 20 minutes or until a toothpick inserted in the center comes out clean.  Cool 5 minutes before serving.
Note: If you like a sweeter muffin, sprinkle with some cinnamon sugar before baking.
