Soft Raisin Cookie Recipe from Garden Gate Get-A-Way Bed & Breakfast

If you have ever stayed at Garden Gate Get-A-Way Bed & Breakfast you have met Carol's mother, Beverly.  Some people know her as "the cookie lady" because she often bakes the cookies that we put in the guest rooms each day.  One of Carol's favorite cookies that her mother makes is her Raisin Cookies.  They are soft, have a hint of spice, and no one can eat just one!

Raisin Cookies

Preheat oven to 350 degrees
1 c. water 
3 ½ c. flour
2 c. raisins 

1 t. baking powder
1 c. butter Crisco sticks 

1 t. baking soda
1 ¾ c. sugar 

½ t. ground cinnamon
2 eggs, beaten 

½ t. ground nutmeg
1 t. vanilla

Combine raisins and water in a small saucepan;
Bring to a boil. Cook for 3 minutes;
Remove from heat and let cool (do not drain)
In a mixing bowl, cream Crisco, sugar, eggs, and vanilla.
Combine the dry ingredients; gradually add to creamed mixture and stir in raisins.
Drop by rounded teaspoonfuls on greased baking sheets about 2”.  Bake for 12-14 minutes.
